Poutine (pronounced poutsin) is a dish that includes french fries and cheese curds topped with a brown gravy. It originated in the Canadian province of Quebec in the late 1950s. Several restaurants in the area claim to be the originators of the dish, but no consensus exists. It has, actually, long been associated with Quebec cuisine. For many years, it was perceived negatively and mocked, and even used by some to stigmatize Quebec society. Poutine later became celebrated as a symbol of a local cultural pride. Its rise in prominence led to its popularity outside the province, especially in Ontario, the Maritime and in the Northeastern USA.

Ingredients
- 650g of french fries potatoes
- 400mL of gravy. Traditionally, it is a light and thin chicken gravy, somewhat salty and mildly spiced with a hint of pepper. Alternatively you can make a sauce brune, which is a combination of chicken and beef stock
- 400g white cheddar cheese curds
Directions
- Potatoes are should be cut medium thickness and fried twice. Doing this way the inside stays soft, while the outside is crispy
- Meanwhile, prepare and heat the gravy (store bought or home-made) over medium heat until simmering.
- Transfer fries to a platter. Top with cheese curds then pour gravy over fries. Serve immediately
